Air Fryer Mushroom Roll-Ups offer a crispy, golden exterior with hardly any oil, making it an easy and delicious vegetarian appetizer perfect for busy weeknights.
Sauté chopped mushrooms with diced onion and minced garlic in olive oil over medium heat for about 5–7 minutes until the mushrooms release moisture and then reabsorb it. Season with soy sauce, salt, and pepper, and cook for another minute to blend the flavors.
Warm the tortillas just until they're soft, then spoon some filling along the center. Roll the tortilla tightly, seam-side down, and if desired, cut each roll in half. If prepping ahead, wrap them in damp paper towels and store them in the fridge for up to a day.
Preheat your air fryer to 200°C. Lightly spray the rolls with oil and arrange them seam-side down in a single layer. Air-fry for 6–8 minutes, turning halfway, until golden and crisp.
Notes
Tip: Serve the roll-ups right after cooking for the best texture. Avoid stacking them while hot, as trapped steam can make the crust soft.
