Authentic Greek Lemon Chicken Soup (Avgolemono) – Easy & Delicious!

Ingredients
  

  • 1 lb chicken breast (or thighs)
  • 6 cups chicken broth
  • 1/2 cup orzo or rice
  • 3 large eggs
  • 1/3 cup fresh lemon juice
  • 2 garlic cloves (minced)
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh dill or parsley (for garnish)

Instructions
 

  • Simmer chicken in broth for 15 minutes. Remove, shred, and set aside
  • Add orzo to the broth and cook until tender (10 mins).
  • Whisk eggs and lemon juice in a bowl until frothy.
  • Temper the egg mixture by slowly adding hot broth while whisking.
  • Stir the egg-lemon mixture into the pot with shredded chicken. Garnish and serve.
