  • 500 g Cooked rice preferably day-old
  • 250 g Protein of choice chicken, shrimp, or tofu
  • 150 g Mixed vegetables for color and crunch
  • 15 ml Oil for searing
  • 100 g Bang Bang sauce creamy, tangy, and slightly spicy
  • 2 cloves Garlic minced
  • 2 stalks Scallions sliced, for garnish
  • 15 g Sesame seeds for garnish

Instructions
 

  • Preheat your air fryer to 200°C.
  • Season the protein and air fry until it reaches a safe internal temperature, around 74°C.
  • Warm the cooked rice briefly if needed. Toss the rice with the cooked protein and mixed vegetables in a light coating of oil.
  • Spread the mixture in a single layer in the air fryer basket and air fry for about 4–6 minutes, shaking the basket halfway through.
  • Stir in the Bang Bang sauce, return to the air fryer for 1–2 more minutes to set the glaze.
  • Serve hot, garnished with scallions, sesame seeds, and a squeeze of lime.

Notes

Tip: Use rice that has been cooled and dried to prevent sogginess, and avoid overcrowding the air fryer for the best crispiness.
