  • 500 g Boneless, skinless chicken shredded
  • 500 g Sweet potatoes peeled and cut into cubes
  • 30 ml BBQ sauce your choice
  • 15 ml Olive oil for roasting
  • 5 g Garlic powder optional
  • 5 g Smoked paprika optional
  • 2 g Salt to taste
  • 2 g Pepper to taste

Instructions
 

  • Preheat your oven to 200°C (400°F) or set your air fryer to 180°C (356°F).
  • In a bowl, toss the sweet potato cubes with olive oil, garlic powder, smoked paprika, salt, and pepper.
  • Spread sweet potatoes on a baking sheet in a single layer. Roast in the oven for about 25 minutes until tender and slightly crispy. If using an air fryer, cook for 15-20 minutes.
  • Meanwhile, cook the chicken in a separate pan or use pre-cooked chicken. If desired, shred cooked chicken with two forks.
  • Once the sweet potatoes are done, combine the shredded chicken with BBQ sauce in a bowl.
  • Serve the BBQ chicken over the roasted sweet potatoes and add your favorite toppings like fresh herbs or sliced onions.

Tip: For extra crispy sweet potato edges, spread them out in a single layer and avoid overcrowding the pan.
