  • 500 g Beets cooked until tender
  • 200 g Fresh spinach rinsed and dried
  • 2 pieces Mandarin oranges segmented
  • 50 g Red onion thinly sliced
  • 30 g Pine nuts toasted
  • 100 g Fera cheese crumbled or shaved
  • 50 ml Citrus vinaigrette homemade or store-bought

Instructions
 

  • Cook the beets until tender, then cool and slice them into bite-sized pieces.
  • In a large bowl, combine the cooked beets, spinach, mandarin segments, and red onion. Toss gently to avoid bruising the spinach.
  • Sprinkle the toasted pine nuts and crumbled Fera cheese over the top.
  • Drizzle with the citrus vinaigrette, toss lightly, and finish with a pinch of salt and pepper to taste.
  • Serve immediately or chill for later enjoyment.
