  • 450 g Boneless chicken thighs or breasts, diced
  • 400 g White beans drained and rinsed
  • 150 g Corn optional
  • 150 g Onion finely chopped
  • 2 cloves Garlic minced
  • 500 ml Chicken broth
  • 30 g Cajun seasoning
  • 113 g Cream cheese
  • 120 g Sour cream or heavy cream
  • Salt and pepper to taste

Instructions
 

  • Start by sautéing the onion in a little oil over medium heat until it turns translucent, about 4–5 minutes.
  • Add the garlic and cook for another 30 seconds until you get that beautiful aroma.
  • Stir in the diced chicken and cook until it’s lightly browned, around 5–6 minutes.
  • Pour in the chicken broth, add the Cajun seasoning, and let it simmer gently.
  • Toss in the white beans (and corn, if using) and let everything simmer for 10–15 minutes for the flavors to blend.
  • Reduce the heat and whisk in the cream cheese until it's melted and smooth, then fold in the sour cream.
  • Season with salt and pepper to taste and serve hot with your favorite toppings.

Notes

Tip: If the chili feels too thick, add a splash more broth to reach your desired consistency.
