Instructions
Start by sautéing the onion in a little oil over medium heat until it turns translucent, about 4–5 minutes.
Add the garlic and cook for another 30 seconds until you get that beautiful aroma.
Stir in the diced chicken and cook until it’s lightly browned, around 5–6 minutes.
Pour in the chicken broth, add the Cajun seasoning, and let it simmer gently.
Toss in the white beans (and corn, if using) and let everything simmer for 10–15 minutes for the flavors to blend.
Reduce the heat and whisk in the cream cheese until it's melted and smooth, then fold in the sour cream.
Season with salt and pepper to taste and serve hot with your favorite toppings.
Notes
Tip: If the chili feels too thick, add a splash more broth to reach your desired consistency.
