  • 500 g Ground beef
  • 250 g Elbow macaroni or short pasta
  • 200 g Shredded cheddar cheese
  • 200 ml Milk or cream
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 400 g Tomato sauce or diced tomatoes
  • 30 g Butter or oil
  • to taste Salt
  • to taste Pepper
  • optional Worcestershire sauce
  • optional Mustard
  • optional Pickle relish
  • for topping Crispy onions

Instructions
 

  • Begin by cooking the pasta in salted water until al dente, about 8–10 minutes. Drain and set aside, reserving a splash of the cooking water.
  • Meanwhile, brown the ground beef in a skillet over medium heat until fully cooked and browned, about 6–8 minutes; season with salt and pepper. Add chopped onion and garlic in the last minute to soften.
  • Stir in tomato sauce and a little milk or cream to create a creamy base. Bring to a gentle simmer, then whisk in shredded cheddar gradually until the sauce is smooth and glossy.
  • Return the drained pasta to the pan, combine, and simmer for a couple of minutes to marry the flavors. If the sauce seems too thick, loosen with a few tablespoons of the reserved pasta water.
  • If you’d like a topping-ready finish, plate the mac and cheese, then sprinkle with extra cheese and pop under a 175°C oven or grill for 3–5 minutes until the top is bubbly.

Notes

Tip: Add crispy bacon or crunchy onions just before serving to enhance texture and flavor.
