  • 200 g Ripe avocado mashed
  • 120 g Cheddar cheese or Monterey Jack sliced
  • 4 slices Sturdy bread such as sourdough or whole-grain
  • 15 ml Mayonnaise or lemon juice to taste
  • 1 pinch Salt to taste
  • 1 pinch Pepper to taste

  • Start by preheating your air fryer to 182°C. Lightly season the chicken with salt and pepper, then cook it until it hits an internal temperature of 74°C, which typically takes around 8–10 minutes per side depending on thickness.
  • After that, let the chicken rest for a few minutes before slicing it up.
  • While that’s happening, mash the avocado with a little salt and a squeeze of lemon if you’d like.
  • To assemble the sandwich, spread a thin layer of mayo on each slice of bread, then layer on the cheese, sliced avocado, and chicken.
  • Top it with another slice of bread and place the assembled sandwiches in the air fryer. Cook for about 3–4 minutes until the cheese is melted and the bread is golden.
  • Let them cool slightly before serving.

Tip: Don't skip the preheating step to avoid soggy bread and ensure nicely melted cheese.
