Instructions
Pat dry the chicken pieces and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
Add chicken pieces to the skillet and sear until golden brown, about 5-7 minutes, then remove from the skillet and set aside.
Add minced garlic to the same skillet and sauté for 1 minute until fragrant, being careful not to burn it.
Return the chicken to the skillet, add chicken broth, and bring to a simmer.
Fold in the parmesan cheese and a small amount of the cooking liquid into the skillet.
Add cooked rice to the skillet, mix well, and ensure every grain is coated in the garlicky sauce.
Finish with lemon zest and chopped parsley if desired. Serve warm and enjoy!

Tip: Avoid overcrowding the skillet to ensure the chicken sears properly instead of steaming.
