  • 500 g Chicken breast cut into bite-sized pieces
  • 200 g Rice long-grain or basmati
  • 4 cloves Garlic minced
  • 30 g Parmesan cheese grated
  • 30 ml Olive oil
  • 1000 ml Chicken broth
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste
  • 1 lemon Lemon zest optional
  • 10 g Parsley chopped, optional

Instructions
 

  • Pat dry the chicken pieces and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  • Add chicken pieces to the skillet and sear until golden brown, about 5-7 minutes, then remove from the skillet and set aside.
  • Add minced garlic to the same skillet and sauté for 1 minute until fragrant, being careful not to burn it.
  • Return the chicken to the skillet, add chicken broth, and bring to a simmer.
  • Fold in the parmesan cheese and a small amount of the cooking liquid into the skillet.
  • Add cooked rice to the skillet, mix well, and ensure every grain is coated in the garlicky sauce.
  • Finish with lemon zest and chopped parsley if desired. Serve warm and enjoy!

Notes

Tip: Avoid overcrowding the skillet to ensure the chicken sears properly instead of steaming.
