Chipotle Honey Chicken Thighs with Smoked Gouda Mashed Potatoes

This dish brings together a delicious blend of flavors: sweet honey, smoky chipotle, and a hint of heat. As the glaze caramelizes on the chicken during cooking, it gives you a shiny finish and a satisfying crust. The smoked Gouda mashed potatoes provide a creamy, cheesy contrast that completes the meal.

Equipment

  • Mixing Bowl
  • Pot
  • Masher
  • Measuring Spoons
  • Thermometer

Ingredients

Ingredients

  • 500 g Chicken thighs boneless or skinless
  • 30 ml Honey
  • 15 g Chipotle smoked, chopped
  • 100 g Smoked Gouda shredded
  • 600 g Potatoes Yukon Gold or Russet, cut into chunks
  • 100 ml Cream for mashing
  • 30 g Butter for richness
  • 5 g Salt to taste
  • 5 g Pepper to taste

Instructions

  • Begin with the chicken thighs coated evenly in your marinade. Use a zip-top bag or a shallow dish to cover them. Marinate for at least 15 minutes.
  • While the chicken is marinating, boil the potatoes until tender. Drain them thoroughly.
  • Mash the boiled potatoes with cream, butter, smoked Gouda, salt, and pepper until smooth and creamy.
  • Heat the air fryer and place the marinated chicken thighs in a single layer. Cook until crispy and the internal temperature reaches 74 °C.
  • Prepare the honey chipotle glaze during the last few minutes of cooking. Brush it on the chicken for a glossy finish.

Notes

Tip: Do not overcrowd the air fryer basket to ensure crispiness. You can adjust the chipotle amount based on your spice preference.
