  • 250 g Cream cheese softened
  • 50 g Sugar for filling
  • 1 Egg for filling
  • 60 g Chocolate chips for dough
  • 100 g Butter softened
  • 100 g Sugar for dough
  • 1 tsp Vanilla extract for dough
  • 200 g All-purpose flour sifted
  • 1 tsp Baking powder
  • 1 pinch Salt

Instructions
 

  • In a mixing bowl, beat the cream cheese until smooth. Add 50g sugar and the egg, mixing until well combined. Chill the filling for easier handling.
  • In another bowl, cream together 100g butter and 100g sugar. Mix in the vanilla extract.
  • Add the flour, baking powder, and salt to the butter mixture, mixing until just combined. Fold in the chocolate chips.
  • Scoop out a portion of dough, flatten it slightly, place a small amount of cheesecake filling in the center, and wrap the dough around it. Seal completely.
  • Preheat the oven to 175°C. Place the cookies on a baking sheet and bake for 12-15 minutes, or until the edges are set and centers jiggle slightly.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

Tip: Avoid overmixing the filling and dough to prevent dense cookies. Chill if the dough feels too sticky.
