Chocolate Chip Cheesecake Cookies combine two delicious desserts into one tempting treat. Imagine a creamy cheesecake nestled inside a chewy cookie, with pockets of melted chocolate and a hint of tang.
In a mixing bowl, beat the cream cheese until smooth. Add 50g sugar and the egg, mixing until well combined. Chill the filling for easier handling.
In another bowl, cream together 100g butter and 100g sugar. Mix in the vanilla extract.
Add the flour, baking powder, and salt to the butter mixture, mixing until just combined. Fold in the chocolate chips.
Scoop out a portion of dough, flatten it slightly, place a small amount of cheesecake filling in the center, and wrap the dough around it. Seal completely.
Preheat the oven to 175°C. Place the cookies on a baking sheet and bake for 12-15 minutes, or until the edges are set and centers jiggle slightly.
Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
Tip: Avoid overmixing the filling and dough to prevent dense cookies. Chill if the dough feels too sticky.
