  • 500 g Chicken pieces skinless, cut into desired size
  • 30 ml Lime juice freshly squeezed
  • 15 ml Olive oil or other neutral oil
  • 2 clove Garlic minced
  • 5 g Cumin ground
  • 5 g Chili powder or to taste
  • 5 g Salt or to taste
  • 2 g Black pepper freshly ground
  • 5 g Oregano dried

Instructions
 

  • Whisk together all marinade ingredients in a mixing bowl until well combined.
  • Add the chicken pieces to the marinade and turn to coat evenly. Let rest in the fridge for at least 30 minutes.
  • When ready to cook, pat the chicken dry for a better sear, then cook on a grill or skillet until the internal temperature reaches 74°C.
  • Allow the chicken to rest for a few minutes before serving to retain juiciness.

Notes

Tip: For deeper flavor, marinate the chicken longer, up to overnight if possible. This marinade is also versatile for various cooking methods.
