  • 240 ml Milk
  • 5 ml Vanilla extract
  • 2 g Ground cinnamon
  • 8 slices Thick bread (brioche or challah preferred)
  • 100 g Sweetened shredded coconut
  • 30 g All-purpose flour for coating
  • 30 g Butter or oil for frying

Instructions
 

  • In a mixing bowl, whisk together the eggs, milk, vanilla, and cinnamon.
  • Dip each slice of bread into the egg mixture, making sure both sides are coated.
  • Place the flour and coconut in separate shallow dishes. First, dredge each slice in flour, then firmly press it into the coconut.
  • Melt butter in a large skillet over medium heat. Cook each slice for about 3-4 minutes per side or until golden brown.
  • Serve warm with maple syrup or your favorite fruit toppings. Believe me, this makes all the difference!

Notes

Tip: To keep your Coconut Crusted French Toast from becoming soggy, make sure your bread is slightly stale. Also, let the excess egg mixture drip off before coating—it makes a huge difference.
