Instructions
Season the chicken well with salt and pepper, then sear it in a hot skillet with olive oil until it's golden brown, about 3–4 minutes per side.
Remove the chicken from the pan and let it rest briefly.
In the same pan, melt the butter, add minced garlic, and cook until it smells amazing, about 30–60 seconds.
Pour in the chicken broth and cream, then whisk in the parmesan until the mixture is smooth.
Let the sauce simmer until it thickens slightly, about 3–5 minutes, then return the chicken to the pan and spoon the sauce over it.
Cook until the chicken reaches an internal temperature of 165°F (74°C), which takes about 3–5 more minutes depending on its thickness.
Let it rest for a quick 3–5 minutes and sprinkle with parsley before serving.
Notes
Tip: A gentle simmer is key for a silky sauce. If the sauce thickens too quickly, add a splash of chicken broth to loosen it.
