  • 450 g Boneless, skinless chicken breasts or thighs
  • 150 g Orzo pasta
  • 720 ml Beef broth
  • 2 medium Sweet onions thinly sliced
  • 100 g Shredded Swiss cheese
  • 50 g Parmesan cheese
  • 30 ml Olive oil for cooking
  • Fresh herbs such as thyme or parsley
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat the oven to 190°C.
  • In a large skillet, heat the olive oil over medium heat and sauté the onions until they are caramelized, about 15–20 minutes.
  • Add the chicken to the skillet and cook until browned on both sides, approximately 5–7 minutes.
  • Stir in the beef broth and orzo, and bring to a simmer.
  • Transfer the mixture to a baking dish and top with cheeses.
  • Bake for 25–30 minutes until bubbly and golden on top!

Notes

Tip: If the casserole comes out dry, try adding a bit more broth before baking. Ensure onions are well caramelized for the best flavor. Keep an eye on the cheese; it can brown quickly, so cover it with foil if necessary!
