Wholesome blueberry oatmeal bars with crispy oat crumble - naturally sweetened, perfect for breakfast or snacks!

- 2 cups rolled oats
- 1 cup whole wheat flour
- 1/3 cup coconut oil (melted)
- 1/4 cup maple syrup
- 1.5 cups blueberries (fresh or frozen)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Preheat oven to 350°F (175°C) and line 8x8 pan with parchment
Mix oats, flour, coconut oil, maple syrup and spices for crumble
Press 2/3 mixture into pan, add blueberries, then remaining crumble
Bake 20-25 mins until golden. Cool completely before slicing
