Wholesome blueberry oatmeal bars with crispy oat crumble - naturally sweetened, perfect for breakfast or snacks!

Ingredients
  

  • 2 cups rolled oats
  • 1 cup whole wheat flour
  • 1/3 cup coconut oil (melted)
  • 1/4 cup maple syrup
  • 1.5 cups blueberries (fresh or frozen)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions
 

  • Preheat oven to 350°F (175°C) and line 8x8 pan with parchment
  • Mix oats, flour, coconut oil, maple syrup and spices for crumble
  • Press 2/3 mixture into pan, add blueberries, then remaining crumble
  • Bake 20-25 mins until golden. Cool completely before slicing
