Ingredients
  

  • 1 lb smoked sausage (sliced)
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 bell pepper (diced)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions
 

  • Brown sausage in a large skillet over medium heat. Remove and set aside.
  • In the same skillet, sauté onions, garlic, and bell peppers until soft.
  • Add rice, broth, paprika, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes.
  • Stir in cooked sausage and cheese until melted. Garnish with parsley and serve hot.
