Easy Chicken Alfredo Bake

Ingredients
  

  • 12 oz penne pasta
  • 1.5 lbs chicken breast, diced
  • 2 cups heavy cream
  • 1 cup parmesan, grated
  • 2 cups mozzarella, shredded
  • 4 garlic cloves, minced
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F. Cook pasta 2 minutes less than package directs. Drain, reserving 1 cup pasta water.
  • Melt butter in saucepan. Sauté garlic 30 seconds. Whisk in flour to make roux.
  • Gradually whisk in warm cream until smooth. Stir in parmesan and nutmeg.
  • Combine pasta, sauce, and chicken in baking dish. Top with mozzarella.
  • Bake 15-20 minutes until bubbly. Broil 2 minutes for golden top if desired.

Notes

For make-ahead: Assemble unbaked and refrigerate up to 24 hours. Add 5 minutes to baking time.
