Ingredients
  

  • 1 Cup unsalted butter, softened
  • 1 Cup granulated sugar
  • 2 large eggs, room temperature
  • 1 Tsp vanilla extract
  • 3 Cups all-purpose flour
  • 1 Tsp baking powder
  • 8 Oz cream cheese, softened
  • 1/4 Cup powdered sugar
  • 1 Tsp vanilla extract
  • 1/2 Cup granulated sugar (for coating)
  • 1 Tbsp cinnamon (for coating)

Instructions
 

  • Make the cheesecake filling: Beat cream cheese, powdered sugar, and vanilla until smooth. Chill 30 minutes.
  • Prepare cookie dough: Cream butter and sugar, then mix in eggs and vanilla. Gradually add flour and baking powder.
  • Assemble: Roll dough into 1.5-inch balls, flatten, add 1 tsp filling, then seal. Bake at 350°F (175°C) for 12-14 minutes.
  • Coat hot cookies in cinnamon sugar. Cool 10 minutes before serving.

Notes

Store in fridge for up to 3 days or freeze for 1 month. For extra crispiness, broil 30 seconds at the end of baking!
