Start by laying out your tortillas and evenly spreading a light filling of protein and cheese. Roll them up tightly, seal the seam, and slice them into bite-sized rounds or log-shaped pinwheels.
For your au jus, mix beef broth with seasonings and let it simmer gently. Thicken if desired with a cornstarch slurry.
Oven method: Preheat your oven to 175 °C. Arrange the rolls on a baking sheet, seam side down, and bake for 12–15 minutes until the cheese is melted and edges are crisp.
