- 8 large eggs
- 1/2 cup whole milk
- 1 cup shredded cheddar cheese
- 2 cups vegetables (spinach, mushrooms, etc.)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Preheat oven to 375°F (190°C).
Sauté veggies in oven-safe skillet for 5 minutes.
Whisk eggs, milk, salt, and pepper until frothy.
