Ingredients
  

  • 8 large eggs
  • 1/2 cup whole milk
  • 1 cup shredded cheddar cheese
  • 2 cups vegetables (spinach, mushrooms, etc.)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Sauté veggies in oven-safe skillet for 5 minutes.
  • Whisk eggs, milk, salt, and pepper until frothy.
  • Pour egg mixture over veggies; sprinkle with cheese.
  • Bake for 15-20 minutes until set but slightly jiggly.
