Easy Ground Beef Casserole

Ingredients
  

  • 1.5 lbs ground beef (80/20 blend)
  • 2 cups elbow pasta, uncooked
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 can (14oz) diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 2 cups cheddar cheese, shredded
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 375°F. Brown beef in batches, drain, and set aside.
  • Sauté onion in remaining fat for 3 minutes. Add garlic and tomato paste; cook 1 minute.
  • Deglaze pan with beef broth, scraping up browned bits.
  • Layer in baking dish: pasta → beef → tomatoes → sauce. Top with cheese.
  • Bake covered for 30 minutes. Uncover and broil 2 minutes until golden.

Notes

For make-ahead: Assemble unbaked and refrigerate up to 24 hours. Add 5 minutes to baking time.
