Easy Qdoba Steak Bowl Copycat Recipe (Ready in 20 Min!)

Make a homemade Qdoba steak bowl with juicy chipotle-lime steak, cilantro rice, and fresh toppings—just like the restaurant, but faster and cheaper!

Ingredients
  

  • 1 IB flank steak (or skirt steak)
  • 1/4 Cup lime juice
  • 2 Rbsp soy sauce (or tamari for GF)
  • 1 Tbsp chipotle paste
  • 1 Tsp cumin
  • 2 cloves garlic, minced
  • 1 Cup cilantro-lime rice
  • 1/2 Cup black beans
  • 1/4 Cup guacamole
  • 2 Tbsp queso fresco
  • 2 Tbsp chipotle crema (sour cream + lime + adobo sauce)
  • 1/2 Cup pico de gallo

Instructions
 

Marinate the Steak

  • Whisk lime juice, soy sauce, chipotle paste, cumin, and garlic in a bowl. Add steak and marinate for 10+ minutes.

Cook the Steak

  • Grill or pan-sear steak for 3-4 minutes per side (medium-rare). Let rest, then slice thinly.

Assemble Bowls

  • Layer rice, beans, steak, and toppings in bowls. Drizzle with crema and serve!

Notes

For meal prep, store components separately. Steak freezes well for up to 1 month.
