Ingredients
  

  • 1 lb large cooked shrimp, peeled
  • 2 English cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1 avocado, diced (optional)
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

Prep Shrimp

  • If using raw shrimp, sauté in 1 tbsp olive oil for 2-3 minutes per side. Let cool.

Combine Vegetables

  • In a large bowl, toss cucumbers, red onion, and dill.

Make Dressing

  • Whisk olive oil, lemon juice, honey, garlic, salt, and pepper in a small jar.

Assemble Salad

  • Gently fold shrimp and avocado into vegetables. Drizzle with dressing and toss.

Notes

Store undressed salad for up to 3 days. Add ½ tsp red pepper flakes for spice!
