Ingredients

large cooked shrimp, peeled

English cucumbers, thinly sliced

red onion, thinly sliced

cup fresh dill, chopped

avocado, diced
(optional)

extra-virgin olive oil

lemon juice

honey

garlic clove, minced

Instructions
Prep Shrimp
If using raw shrimp, sauté in 1 tbsp olive oil for 2-3 minutes per side. Let cool.
Combine Vegetables
In a large bowl, toss cucumbers, red onion, and dill.
Make Dressing
Whisk olive oil, lemon juice, honey, garlic, salt, and pepper in a small jar.
Assemble Salad
Gently fold shrimp and avocado into vegetables. Drizzle with dressing and toss.
Notes
Store undressed salad for up to 3 days. Add ½ tsp red pepper flakes for spice!
