Ingredients
  

  • 1 1/4 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup cold butter, cubed
  • 3-4 tbsp ice water
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 5 oz fresh spinach (or ½ cup frozen, thawed)
  • 4 large eggs
  • 1 cup heavy cream (or milk)
  • 1 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg (optional)

Instructions
 

  • Blind-bake crust: Preheat oven to 375°F. Press dough into a 9-inch pie dish, prick with a fork, and bake 10 mins. Cool slightly.
  • Sauté onion and garlic in olive oil until soft. Add spinach and wilt (2 mins). Drain excess liquid.
  • Whisk eggs, cream, cheese, salt, pepper, and nutmeg. Stir in spinach mixture.
  • Pour filling into crust. Bake 40-45 mins until golden and set. Cool 10 mins before slicing.
