- 1 1/4 cups all-purpose flour
- 1/2 tsp salt
- 1/2 cup cold butter, cubed
- 3-4 tbsp ice water
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 5 oz fresh spinach (or ½ cup frozen, thawed)
- 4 large eggs
- 1 cup heavy cream (or milk)
- 1 cup shredded cheddar cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
Blind-bake crust: Preheat oven to 375°F. Press dough into a 9-inch pie dish, prick with a fork, and bake 10 mins. Cool slightly.
Sauté onion and garlic in olive oil until soft. Add spinach and wilt (2 mins). Drain excess liquid.
Whisk eggs, cream, cheese, salt, pepper, and nutmeg. Stir in spinach mixture.
Pour filling into crust. Bake 40-45 mins until golden and set. Cool 10 mins before slicing.
