pint strawberries, sliced

crumbled feta cheese

pecans, toasted

red onion, thinly sliced

balsamic vinegar

honey

Dijon mustard

extra virgin olive oil
Salt and pepper to taste
Instructions
Wash and thoroughly dry spinach leaves
Whisk together balsamic vinegar, honey, and Dijon mustard
Slowly drizzle in olive oil while whisking to emulsify
Season dressing with salt and pepper
Arrange spinach in bowl and top with strawberries, feta, pecans, and onion
Drizzle with dressing just before serving
Notes
Dressing keeps for 1 week refrigerated. Toast pecans for enhanced flavor.
