  • 700 g beef chuck cut into 2 cm cubes
  • 2 onions chopped
  • 3 cloves garlic minced
  • 2 red bell peppers chopped
  • 400 g can crushed tomatoes or 500 ml tomato passata
  • 250 ml beef stock
  • 30 ml olive oil for browning
  • 30 g paprika sweet or a mix of sweet and smoked
  • 5 g ground cumin
  • 2.5 g ground cinnamon
  • 5 g ground coriander
  • to taste salt and pepper
  • 2 tbsp chopped fresh parsley optional for garnish

Instructions
 

  • Preheat the air fryer to 200°C. Season the beef with salt and pepper, and air fry in batches for 8–10 minutes until browned.
  • In a large pot, heat olive oil over medium heat and sauté onions for 5–7 minutes until translucent.
  • Add the garlic and cook for another minute before adding the bell peppers.
  • Stir in the spices: paprika, cumin, cinnamon, and coriander to release their flavors.
  • Return the browned beef to the pot, add crushed tomatoes and beef stock, and bring to a boil.
  • Reduce to a gentle simmer, cover, and cook for 25–30 minutes until the beef is tender.
  • Taste and adjust the seasoning if necessary. Serve over rice or couscous, garnished with parsley.

Notes

Tip: Avoid crowding the air fryer to ensure even browning of the beef!
