Ingredients
  

Egg Mixture

  • 4 eggs at room temperature
  • 2 tbsp milk
  • 1/4 tsp kosher salt
  • 10 dashes Tabasco sauce or to taste

Base and Toppings

  • 6 whole wheat English muffins split and at room temperature
  • 12 slices deli ham thinly sliced
  • 1 cup cheddar or pepper jack cheese shredded, adjust to taste
  • Chopped vegetables optional: tomatoes, mushrooms, olives, green onions, etc.

Instructions
 

  • Preheat oven to 400°F. Line a baking sheet with foil and spray with non-stick cooking spray or brush with melted butter.
  • In a bowl, whisk together eggs, milk, salt, and Tabasco until fully blended.
  • Dip each English muffin half cut-side-down into the egg mixture, allowing it to soak in slightly. Place on the baking sheet, cut side up.
  • Layer with strips of ham, any optional vegetables, and finish with shredded cheese on top.
  • Bake in preheated oven for 15 minutes or until cheese is melted and golden. Serve hot and enjoy!

Notes

For freezer prep, cool the baked pizzas completely, freeze individually, and reheat in the microwave for 1-2 minutes when ready to enjoy.
