Ingredients
  

For the base

  • 2 pounds Yukon gold potatoes washed and cut into quarters
  • Non-stick cooking spray or olive oil

For the chicken

  • 2 pounds boneless, skinless chicken breasts cut into bite-sized chunks
  • 1 tablespoon dried Italian seasoning

For the creamy garlic parmesan sauce

  • 1 bottle (12 ounces) parmesan garlic sauce
  • 1/2 cup chicken broth low-sodium if possible
  • 1 cup freshly grated parmesan cheese

For garnish and finishing touch

  • Fresh parsley chopped, for garnish
  • Extra parmesan cheese for serving

Instructions
 

  • Lightly coat the inside of your slow cooker with non-stick cooking spray or a touch of olive oil.
  • Place the quartered Yukon gold potatoes in a single layer at the bottom of the crockpot.
  • Place the bite-sized chicken pieces directly on top of the potatoes. Sprinkle the Italian seasoning evenly over the chicken.
  • Pour the parmesan garlic sauce and chicken broth over the chicken and potatoes. Add the grated parmesan cheese and stir gently until everything is coated.
  • Cover with the lid and cook on LOW for 4 to 5 hours or HIGH for 3 to 4 hours, until the chicken is tender and potatoes are soft.
  • Stir the mixture gently. Garnish with fresh parsley and a sprinkle of extra parmesan before serving.
