For the chicken
- 2 pounds boneless, skinless chicken breasts cut into bite-sized chunks
- 1 tablespoon dried Italian seasoning
For the creamy garlic parmesan sauce
- 1 bottle (12 ounces) parmesan garlic sauce

Lightly coat the inside of your slow cooker with non-stick cooking spray or a touch of olive oil.
Place the quartered Yukon gold potatoes in a single layer at the bottom of the crockpot.
Place the bite-sized chicken pieces directly on top of the potatoes. Sprinkle the Italian seasoning evenly over the chicken.
Pour the parmesan garlic sauce and chicken broth over the chicken and potatoes. Add the grated parmesan cheese and stir gently until everything is coated.
Cover with the lid and cook on LOW for 4 to 5 hours or HIGH for 3 to 4 hours, until the chicken is tender and potatoes are soft.
Stir the mixture gently. Garnish with fresh parsley and a sprinkle of extra parmesan before serving.
Helpful Notes & Secrets
- Choose the right potatoes: Yukon gold potatoes work best because they hold their shape while becoming buttery and tender. Red potatoes are another great option.
- Chicken cuts: Chicken breasts create a leaner dish, but boneless chicken thighs bring a richer flavor and juicier texture.
- Enhance the sauce: For extra richness, stir in a splash of heavy cream during the last 30 minutes of cooking for a luxurious, velvety finish.
- Cheese matters: Freshly grated parmesan melts more smoothly and gives a stronger flavor. It makes a noticeable difference.
- Even Cooking Tip: Cut the chicken and potatoes into uniform sizes to ensure they cook evenly.
- Add vegetables: For extra nutrition, toss in carrots, broccoli, or green beans during the last hour of cooking.
- Avoid overcooking: If possible, choose the LOW setting for the juiciest, most tender chicken result.
