These Greek honey pistachio cheesecake bars combine creamy cream cheese, roasted pistachios, and the sweet floral notes of honey. Enjoy a delightful blend of smooth filling with a crunchy texture that feels both elegant and approachable.
Preheat the oven to 180°C (350°F). Grease a baking dish.
In a mixing bowl, combine the crushed graham crackers with melted butter and press the mixture into the bottom of the baking dish to form the crust. Bake for 10 minutes until firm.
In a separate bowl, beat the softened cream cheese with sugar until smooth and creamy. Mix in the honey and half of the chopped pistachios.
Spread the cream cheese filling evenly over the baked crust. Top with remaining pistachios.
Bake for an additional 20 minutes until the filling is set but still jiggly in the center. Remove from oven and let cool completely.
Chill in the refrigerator for at least 3 hours before slicing into bars.
Notes
Tip: If using phyllo dough instead of graham crackers, layer it carefully and brush with melted butter for a deliciously flaky crust.
