Ingredients

main

  • 1 lb ground beef (85/15 works best for flavor)
  • 5 medium potatoes (Russet or Yukon Gold)
  • 1 onion, diced (yellow or sweet)

flavor Boosters

  • 1 tsp smoked paprika (my chef’s secret!)
  • 1/2 tsp thyme
  • Salt & pepper to taste

Instructions

Brown the Beef

  • In a skillet over medium heat, cook the ground beef with onions and garlic until the meat is browned (about 7 minutes). Drain excess grease and season with salt, pepper, and smoked paprika.

Layer Like a Pro

  • Potatoes First: Thinly slice potatoes (1/8” thick) and layer them in a greased 9x13” baking dish.
  • Beef Layer: Spread half the beef mixture over the potatoes.
  • Soup Mixture: Whisk together the soup and evaporated milk, then pour half over the beef.
  • Cheese It Up: Sprinkle 1 cup of cheese.
  • Repeat: Add another layer of potatoes, beef, soup, and cheese.

Bake to Perfection

  • Cover with foil and bake at 375°F for 1 hour. Remove the foil, bake another 15 minutes until bubbly and golden. Let it rest 10 minutes before serving—patience, my friend!
