Instructions
First, preheat your oven to 175°C and lightly grease a mini-muffin tray.
In one bowl, whisk the dry ingredients together; in another, mix the wet ingredients until smooth.
Combine the two until just moistened, then scoop the batter into the cups, filling them about three-quarters full.
Bake for 12–15 minutes, or until the tops turn golden and a toothpick inserted comes out clean.
Let the poppers rest for a moment before removing them from the tray to keep the crumb intact.
If you want an extra-crispy edge, pop them under the broiler for 1–2 minutes—keep a close eye so they don’t burn.
While your poppers are baking, melt a nice chunk of butter and whisk in honey until smooth.
Brush the glaze over the tops of the poppers fresh out of the oven for a sticky-sweet finish.
