  • 600 g Chicken breasts boneless and skinless
  • 100 g Cranberries fresh or dried
  • 50 g Honey for glazing
  • 150 g Ricotta cheese for creaminess
  • 15 ml Olive oil for coating
  • 2 g Salt
  • 3 g Pepper

Instructions
 

  • Preheat the oven to 175°C.
  • Pat the chicken dry and drizzle with olive oil, then season with salt and pepper.
  • Arrange the chicken in a baking dish, then drizzle honey over the top.
  • Add cranberries around the chicken and dollop ricotta cheese on top.
  • Bake in the preheated oven for about 25 minutes, or until the chicken reaches an internal temperature of 74°C.

Notes

Tip: Let the bake sit for a few minutes after coming out of the oven to help the juices settle and make serving easier.
