Instructions
Preheat the oven to 175°C.
Pat the chicken dry and drizzle with olive oil, then season with salt and pepper.
Arrange the chicken in a baking dish, then drizzle honey over the top.
Add cranberries around the chicken and dollop ricotta cheese on top.
Bake in the preheated oven for about 25 minutes, or until the chicken reaches an internal temperature of 74°C.
Notes
Tip: Let the bake sit for a few minutes after coming out of the oven to help the juices settle and make serving easier.
