How to Cook the Perfect Pikes Peak Beef Roast (Tender, Juicy & Fall-Apart Easy!)

Ingredients
  

Gather These Staples:

  • 3-4 lb Pikes Peak roast (aka "heel of round")
  • 2 tbsp  olive oil 
  • 1 cup  beef broth (low-sodium for health-conscious cooks)
  • 1 tbsp  coffee grounds (secret flavor booster!)
  • 4 garlic cloves, minced
  • 1 onion, sliced

Instructions
 

Sear for Flavor (5 Minutes)

  • Heat olive oil in a Dutch oven. Season the roast with salt, pepper, and coffee grounds. Sear all sides until golden brown. 

Slow Cook to Tenderness (3 Hours)

  • Add broth, garlic, and onions. Cover and cook at 325°F until meat shreds easily. OR use a slow cooker on low for 8 hours.

Rest & Serve (10 Minutes)

  • Let the roast rest 10 minutes before slicing. Serve with garlic mashed potatoes or roasted veggies.
