  • 500 g chicken breasts about 2 large breasts
  • 1 large egg

Coating & Cooking

  • 125 g shredded parmesan cheese pre-shredded, not grated
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 clove garlic minced (optional)
  • salt and pepper to taste

Instructions
 

  • Cut each chicken breast horizontally into 2 thin cutlets (~1.75cm thick). Lightly pound thicker pieces for even cooking.
  • Whisk egg, garlic, salt, and pepper in a shallow bowl.
  • Place shredded Parmesan in a separate shallow bowl.
  • Dip chicken in egg mixture, then press firmly into Parmesan, coating both sides. Focus on the cut side for maximum crispiness.
  • Heat butter and oil in large skillet over medium-high heat. Cook chicken 3 minutes per side without moving until deep golden brown.
  • Let rest 5 minutes before serving with lemon wedges or your favorite sides.

Notes

Pro Tips: For extra crispiness, use pre-shredded Parmesan (not grated). Leftovers reheat best in oven at 350°F for 10 minutes. Try with a squeeze of lemon for brightness!
