Ingredients
  

Steak & Potatoes

  • 2 lbs sirloin steak (cubed)
  • 2 lbs Yukon Gold potatoes
  • 2 tbsp olive oil
  • 2 tsp smoked paprika
  • 1 tbsp Worcestershire sauce

Garlic Herb Butter

  • 6 tbsp unsalted butter
  • 4 garlic cloves (minced)
  • 1 tbsp fresh parsley
  • 1 tsp rosemary (chopped)
  • 1/2 tsp black pepper

Prep Like a Pro

  • Start by cubing your steak into bite-sized pieces (1-inch thick). For potatoes, peel and dice them evenly—this ensures they cook uniformly.

Season & Sear the Steak

  • Marinate: Toss steak bites with Worcestershire sauce, paprika, 1 tsp salt, and 1 tbsp olive oil.
  • Sear: Heat a cast-iron skillet over medium-high. Add steak in a single layer (don’t overcrowd!) and cook 2-3 minutes per side until caramelized. Transfer to a plate.

Crisp Those Potatoes

  • In the same skillet, add remaining oil and parboiled potatoes.
  • Season with salt, pepper, and a pinch of garlic powder.
  • Cook 12-15 minutes, flipping occasionally, until golden and fork-tender.
  • Why cast iron? It retains heat beautifully for that perfect crust!

Bring It All Together

  • Make the garlic butter: Mix softened butter, minced garlic, parsley, and rosemary.
  • Combine: Return steak bites to the skillet with potatoes. Drop in garlic butter and toss until everything glistens.
