Start by cubing your steak into bite-sized pieces (1-inch thick). For potatoes, peel and dice them evenly—this ensures they cook uniformly.
Season & Sear the Steak
Marinate: Toss steak bites with Worcestershire sauce, paprika, 1 tsp salt, and 1 tbsp olive oil.
Sear: Heat a cast-iron skillet over medium-high. Add steak in a single layer (don’t overcrowd!) and cook 2-3 minutes per side until caramelized. Transfer to a plate.
Crisp Those Potatoes
In the same skillet, add remaining oil and parboiled potatoes.
Season with salt, pepper, and a pinch of garlic powder.
Cook 12-15 minutes, flipping occasionally, until golden and fork-tender.

Bring It All Together
Make the garlic butter: Mix softened butter, minced garlic, parsley, and rosemary.
Combine: Return steak bites to the skillet with potatoes. Drop in garlic butter and toss until everything glistens.
