For the Cheesecake Mixture
- 8 ounces cream cheese softened to room temperature
- 1 cup plain Greek yogurt
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
For the Oreo and Strawberry Layers
- 14 Oreo cookies crushed into fine crumbs
- 8 ounces fresh strawberries diced into small pieces
- whipped cream optional, for topping
In a mixing bowl, combine the softened cream cheese, Greek yogurt, maple syrup, and vanilla extract. Stir with a fork or use an electric mixer until the mixture is smooth and creamy with no lumps.
Begin assembling the layers in 4 (8-ounce) clear glasses or jars. Spoon about one-quarter cup of the cheesecake filling into the bottom of each glass.
Sprinkle two to three tablespoons of crushed Oreos over the filling, followed by two to three tablespoons of diced strawberries.
Repeat the layering process (cheesecake filling, Oreos, strawberries) until the cups are filled, aiming for about six layers total in each serving.
For the best texture, chill the cheesecake cups in the refrigerator for at least 30 minutes to allow the layers to firm up slightly.
If desired, pipe or spoon whipped cream on top for a decorative touch just before serving. Garnish with extra Oreo crumbs or a strawberry slice.
Helpful Tips & Variations
Softening Cream Cheese: Always use room temperature cream cheese to avoid lumps. To soften it quickly, cut the block into smaller cubes and let them sit on the counter for about 30-60 minutes.
Ingredient Swaps:
- Greek Yogurt: Whipped cream can be used for a fluffier, lighter base.
- Maple Syrup: Powdered sugar is a good substitute. Use an electric mixer to ensure it blends smoothly.
- Fruit Variations: Feel free to swap strawberries with raspberries, blueberries, or a mixed berry blend.
Storage Guidelines: Store the cheesecake cups covered in the refrigerator for up to 3 days. For best results, add the whipped cream topping just before you plan to serve them.
