  • 500 g Chicken thighs
  • 300 g Basmati rice rinsed
  • 2 clove Garlic minced
  • 1 medium Onion chopped
  • 15 ml Olive oil extra virgin
  • 1 tbsp Cumin ground
  • 1 tbsp Paprika smoked
  • 500 ml Chicken broth low-sodium recommended
  • 1 unit Lemon juice freshly squeezed
  • 1 cup Bell peppers chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat. Add the chopped onions and minced garlic, cooking until softened, about 5 minutes.
  • Add the chicken thighs to the skillet and season with cumin and paprika. Sear until browned on both sides, about 5-7 minutes.
  • Stir in the rinsed basmati rice, chopped bell peppers, and chicken broth, ensuring everything is well combined. Bring to a simmer.
  • Reduce the heat to low, cover the skillet, and let it simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
  • Remove from heat and drizzle with lemon juice before serving. Enjoy your meal!
