  • 250 g Ripe peaches diced
  • 150 g Sugar for filling
  • 250 g Flour
  • 125 g Butter softened
  • 2 g Eggs
  • 10 g Baking powder
  • 10 g Vanilla extract
  • 200 g Cream cheese for frosting
  • 100 g Powdered sugar for frosting

Instructions
 

  • Preheat your oven to 180°C and line a cupcake tray with liners.
  • In a bowl, mix the diced peaches with sugar and set aside.
  • In another bowl, cream together butter and sugar until light and fluffy. Add eggs, vanilla extract, and mix well.
  • Gradually add flour and baking powder to the butter mixture, mixing until just combined.
  • Fill each cupcake liner halfway with batter, and add a spoonful of peach filling.
  • Top with more batter until the liners are three-quarters full.
  • Bake in the preheated oven for 20 minutes or until a toothpick inserted comes out clean. Let them cool.
  • For frosting, beat together cream cheese and powdered sugar until smooth. Frost the cooled cupcakes.

Notes

Tip: Store unfrosted or frosted cupcakes in an airtight container. Bring them to room temperature before serving.
