Instructions
Preheat your oven to 180°C and line a cupcake tray with liners.
In a bowl, mix the diced peaches with sugar and set aside.
In another bowl, cream together butter and sugar until light and fluffy. Add eggs, vanilla extract, and mix well.
Gradually add flour and baking powder to the butter mixture, mixing until just combined.
Fill each cupcake liner halfway with batter, and add a spoonful of peach filling.
Top with more batter until the liners are three-quarters full.
Bake in the preheated oven for 20 minutes or until a toothpick inserted comes out clean. Let them cool.
For frosting, beat together cream cheese and powdered sugar until smooth. Frost the cooled cupcakes.
Notes
Tip: Store unfrosted or frosted cupcakes in an airtight container. Bring them to room temperature before serving.
