  • 6 cups low-sodium chicken broth
  • 2 tbsp olive oil

  • 1 lemon (zest + juice)
  • 2 cloves garlic minced
  • 1 cup diced carrots or celery
  • 1/2 cup fresh parsley or dill
  • 1 cup baby spinach or kale

  • Rotisserie chicken (shredded)
  • 1 cup canned white beans   (for plant-based)
  • Pan-seared shrimp  (fancy touch!)

Instructions
 

  • Build a Flavor Foundation
  • Heat 2 tbsp olive oil in a large pot over medium heat.
  • Sauté 1 diced onion + 2 minced garlic cloves until golden.
  • Add 1 cup diced carrots/celery – cook 3 minutes.

Elevate the Broth

  • Pour in 6 cups broth + soup mix seasoning packet (save the rice for later!).
  • Add zest of 1 lemon + 1 tsp dried thyme.
  • Simmer 10 minutes to meld flavors.

Cookthe Rice Perfectly

  • Stir in the rice from the soup mix + 1 cup shredded chicken (or beans).
  • Cover and simmer on low until rice is tender (check package time).
  • Finish with juice of 1 lemon + 1 cup fresh greens.
