Ingredients
  

  • 8 Oz pasta (or quinoa)
  • 1 Cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 Cup broccoli florets
  • 1/2 Cup Greek yogurt
  • 3 garlic cloves, minced
  • 2 Tbsp lemon juice
  • 1 Tbsp olive oil
  • 1 Tbsp Dijon mustard
  • Salt & pepper to taste

Instructions
 

Cook Pasta

  • Boil pasta according to package instructions. Drain and rinse under cold water.

Chop Veggies

  • Dice all vegetables uniformly.

Make Garlic Sauce

  • Whisk together yogurt, garlic, lemon juice, olive oil, mustard, salt, and pepper.

Assemble Salad

  • In a large bowl, combine pasta, veggies, and sauce. Toss gently.

Notes

For a vegan version, use dairy-free yogurt and skip cheese.
