  • 500 g Carrots fresh, vibrant, cleaned and trimmed
  • 250 g Ricotta cheese high-quality
  • 15 ml Olive oil for roasting and whipping
  • 100 ml Honey for hot honey
  • 5 g Red pepper flakes adjust to taste
  • 1 whole Lemon juice squeezed
  • to taste Salt
  • to taste Pepper

Instructions
 

  • Preheat the oven to 215°C. Clean and trim the carrots, then toss them with olive oil, salt, and pepper.
  • Spread the carrots out on a baking sheet, ensuring they aren't overcrowded. Roast for about 25-30 minutes, turning halfway until tender and caramelized.
  • In a food processor, blend the ricotta cheese with a splash of olive oil, salt, and lemon juice until creamy and smooth.
  • For hot honey, combine honey with red pepper flakes in a small saucepan over low heat until warmed through. Let it sit to blend the flavors.
  • Once the carrots are roasted, plate them alongside the whipped ricotta. Drizzle with the hot honey before serving.

Notes

Tip: For the best flavor, make sure your ricotta is at room temperature before mixing. Adjust the amount of hot honey to taste for the right balance.
