Roasted Carrots with Whipped Ricotta and Hot Honey

Preheat the oven to 215°C. Clean and trim the carrots, then toss them with olive oil, salt, and pepper.
Spread the carrots out on a baking sheet, ensuring they aren't overcrowded. Roast for about 25-30 minutes, turning halfway until tender and caramelized.
In a food processor, blend the ricotta cheese with a splash of olive oil, salt, and lemon juice until creamy and smooth.
For hot honey, combine honey with red pepper flakes in a small saucepan over low heat until warmed through. Let it sit to blend the flavors.
Once the carrots are roasted, plate them alongside the whipped ricotta. Drizzle with the hot honey before serving.
