  • Preheat the oven to 220°C. Wash and dry the sweet potatoes, then slice them into uniform rounds.
  • Practice the pat-dry technique to help them crisp up. Toss the rounds with olive oil, salt, and pepper, then place them in a single layer on the parchment-lined sheet pan.
  • Roast the rounds for about 20-30 minutes until they are tender and the edges are amber and crisp.
  • After removing from the oven, let them rest briefly. Top each round with crumbled feta and drizzle with honey just before serving.
