  • 500 g Butternut squash peeled and cubed
  • 150 g Gnocchi
  • 960 ml Vegetable broth
  • 150 g Onion chopped
  • 2 Garlic cloves minced
  • 5 g Thyme dried
  • 120 ml Heavy cream
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Start by peeling and cubing the butternut squash.
  • Chop the onion and mince the garlic.
  • In a large pot, sauté the onion in a little oil until it turns translucent.
  • Add the garlic and thyme, and cook for another minute.
  • Stir in the butternut squash and pour in the vegetable broth.
  • Bring everything to a boil, then lower the heat and let it simmer for 15 minutes.
  • Toss in the gnocchi and let it simmer for another 5 minutes until they’re cooked.
  • Mix in the heavy cream and season with salt and pepper before serving.

Notes

Tip: For a smoother texture, blend the soup after cooking. Adjust the seasoning to your taste since the broth may already be salty.
