Boil water in a large pot and cook the pasta shells according to package instructions until al dente, about 8-10 minutes.
In a pan, sauté the spinach in olive oil until soft, then mix it in a bowl with ricotta and the chopped shrimp.
When the pasta is cooled enough to handle, fill each shell generously with the shrimp and spinach mixture.
For air frying, preheat the air fryer to 175°C. Place the stuffed pasta rolls seam side down and spray lightly with oil. Air fry for 12-15 minutes until golden.
For baking, preheat the oven to 190°C. Arrange rolls in a baking dish, add sauce at the bottom, cover with more sauce, and bake for 25-30 minutes until bubbly and golden.
