  • 250 g Peeled and cooked shrimp finely diced
  • 200 g Lump crab meat gently flaked
  • 60 ml Mayonnaise
  • 15 g Dijon mustard
  • 15 ml Lemon juice
  • 50 g Celery finely chopped
  • 50 g Green onions finely chopped
  • 5 g Old Bay seasoning or Cajun seasoning
  • Salt to taste
  • Pepper to taste
  • 200 g Shredded cheese cheddar or mozzarella
  • 15 g Butter for brushing
  • 6-8 pieces Prepared biscuits or ready-made biscuit dough

Instructions
 

  • In a bowl, whisk together mayo, Dijon, lemon juice, and a pinch of Old Bay until smooth. Fold the mayo mixture into the diced shrimp and flaked crab, then add celery, green onions, and some salt and pepper. Chill for about 10 minutes.
  • Preheat the air fryer to 205 °C and cook the melts for 6–8 minutes until the cheese melts and the biscuits turn golden. If using an oven, arrange the melts on a baking sheet and bake at 205 °C for 8–12 minutes.
  • Let the melts sit for a few minutes after cooking to keep their shape before serving.

Notes

A common mistake is overcooking the seafood filling, which can make it tough. Make sure to space the melts out so heat can circulate.
