Instructions
Pat the chicken dry and season with salt and pepper. Heat olive oil in a skillet and sear the chicken for 2–3 minutes per side until lightly browned. Transfer to the slow cooker.
Add the chopped onion and minced garlic to the slow cooker. Spoon in the fig jam and pour in the chicken broth, then sprinkle thyme over the top.
Set the slow cooker to LOW for 6–8 hours or HIGH for 3–4 hours, until the chicken is tender and reaches an internal temperature of 74°C.
Stir in goat cheese crumbles about 10–15 minutes before serving, folding it in gently to keep some texture.
For extra crispiness, shred the cooked chicken and air-fry at 200°C for 4–6 minutes before serving.
