  • 8 units Tortillas for wrapping
  • 300 g Sausage crumbled
  • 500 ml Sausage gravy homemade or store-bought
  • 100 g Cheese optional, for topping
  • 2 g Seasonings to taste
  • 1 g Vegetables such as peppers or onions, optional

Instructions
 

  • Preheat oven to 180°C (350°F). In a skillet, cook the crumbled sausage until browned.
  • In a bowl, mix the cooked sausage with the optional vegetables and seasonings. Spoon this mixture onto each tortilla and roll them up.
  • Place the rolled tortillas seam side down in a baking dish. Pour the sausage gravy over the top and sprinkle with cheese if using.
  • Bake for about 25 minutes, until the tortillas are heated through and the gravy is bubbly.

Notes

Tip: To avoid soggy enchiladas, ensure the filling is moist but not watery. You can also dry the tortillas slightly before rolling them.
