Ingredients
  

  • 1 lb cooked chicken breast, cubed
  • 1 cup black beans, rinsed
  • 1 cup corn
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/3 cup plain Greek yogurt
  • 2 tbsp low-sugar BBQ sauce
  • 1/2 tsp each: salt, black pepper, cumin, paprika, chili powder
  • 1/2 lime, juiced (optional)
  • Diced avocado and crushed tortilla chips for topping

Instructions
 

  • Prep all vegetables and chop cooked chicken
  • Whisk together Greek yogurt, BBQ sauce, spices and lime juice for dressing
  • In large bowl, combine chicken, beans, corn, tomatoes, onion, cheese and cilantro
  • Add dressing and toss gently to combine
  • Top with avocado and crushed tortilla chips before serving
