  • 300 g Sugar
  • 50 g Unsweetened cocoa powder
  • 5 g Baking soda
  • 2.5 g Salt
  • 240 ml Buttermilk
  • 120 ml Vegetable oil
  • 2 large Eggs
  • 5 ml Vanilla extract
  • 250 g Fresh blackberries
  • 250 g Fresh blackberries
  • 50 g Sugar
  • 15 ml Lemon juice
  • 230 g Unsalted butter softened
  • 480 g Powdered sugar
  • 60 ml Heavy cream
  • 5 ml Vanilla extract
  • 120 ml Blackberry puree

Instructions
 

  • Start by preheating your oven to 175 °C and getting your cake pans ready by greasing and flouring them.
  • In a large mixing bowl, mix together the dry ingredients. In a separate bowl, whisk the wet ingredients together, then combine them into the dry mix until just incorporated. Gently fold in the blackberries.
  • Pour the batter into the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • In a saucepan, combine the blackberries, sugar, and lemon juice. Cook over medium heat, stirring until it thickens, which should take about 10-15 minutes.
  • Beat the softened butter until creamy, then gradually add the powdered sugar. Next, mix in the heavy cream and vanilla extract, followed by the blackberry puree until everything is smooth.

Notes

Tip: Avoid overmixing, and sift together the flour and cocoa powder for a light and fluffy cake.
